Chickpea Pepper Snack

If I haven't said so before, I LOVE Beans. I love that I can go to the store and grab ready-to-eat canned beans. I'll snatch up a can of black beans, pinto beans, butter beans, garbanzo (chickpea), kidney beans, you name it! Then when I want something quick, nutritious, energizing and guilt free...I grab a can and mix it up with whatever I have on hand. A fresh meal in only minutes!


When I was traveling in Europe last year, that was my plan. Well, as plans go, it was laugh. All countries have a different idea about packaging beans. 

In Northern Italy I searched for hours to locate black beans and fresh cilantro to create one of my favorite recipes for a friend. Dried beans were the only option and cilantro was not even a possibility, parsley stood in. In most places I found canned beans were cooked with a mixture of spices and veggies or meats which needed to be reheated. 

Well this dish is no trouble at all, no cooking, just toss it in a bowl and then toss it in your mouth...
To make a medium size bowl portion, keeping it in the refrigerator for seconds and thirds 

...rinse and drain two cans of chickpeas...


Slice up whatever amount of pepper looks good to you, I like a balanced amount.


Then dice it up...


Add some diced red onion...


Minced garlic... 


Cumin...


Olive oil, salt and pepper, to your taste...


So you don't eat it all at once, put a portion in a smaller bowl! ;) Then I like to slice up a Gala apple as a companion. It cools the spicy cumin and adds an extra crunch. Sometimes I sprinkle salt and honey on the apples for a salty sweet flavor. Enjoy!!!


If you are a hummus fan, you may notice that this dish could easily become hummus with the magic of a blender. Generally, I like my hummus original style and with some warm toasty pita. mmmmm. GOOD.
